Apple pancake recipe stashed!

This pancake is cooked in the oven so that the pan or skillet used must be oven-safe.

Ingredients
2 medium Granny Smith apples
3 tablespoon butter
3 eggs
1/3 cup whole milk
1/3 cup heavy cream
2 tablespoon sugar
3 tablespoon butter
1/2 cup light brown sugar
3/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 vanilla
1/2 cup all-purpose flour
Powdered sugar



  1. Wash, peel and quarter the apples
  2. Remove the cores and slice each quarter into 4 or 5 slices
  3. Melt the butter in a deep cast-iron skillet or non-stick pan
  4. Add the brown sugar, cinnamon and cook till the sugar has melted
  5. Add the sliced apples and saute gently for about 10 minutes
  6. When the 10 minutes is up, turn off the heat and let the pan sit for an hour
  7. Preheat the oven to 475 degree F.
  8. In a medium mixing bowl, beat the eggs and add the milk, cream, sugar, salt and vanilla
  9. Mix until the sugar has dissolved
  10. Sift in the all-purpose flour and mix into the egg mixture until the mixture is smooth
  11. Leave the batter to rest for about 10 minutes
  12. When the apples and glaze have cooled, pour the batter over the apples in the skillet and place the whole pan into the oven
  13. Let it bake for 16 minutes or until the top begins to brown
  14. Remove the pan from the oven and let it rest for a minute
  15. Use a knife or spatula to loosen the edges of the pancake
  16. Place a plate over the pan and flip the pan over so that the pancake comes out onto the plate
  17. Serve with a light dusting of powdered sugar
